Posted on

Kartoffelmad is the beloved Danish open-faced sandwich that turns humble boiled potatoes into something utterly elegant. Creamy herbed remoulade, tender fingerling potato slices, and punchy pickled onions are piled high on dense, nutty rye bread for a bite that is simultaneously simple and deeply satisfying. This plant-based version is weeknight-easy yet impressive enough to serve at a Nordic-inspired brunch spread.

Ingredients

For the herbed remoulade:

1/2 cup Vegenaise®

1 1/2 teaspoons finely chopped capers

1 teaspoon whole grain Dijon mustard

1 teaspoon finely chopped dill

1 teaspoon chopped chives

1 teaspoon finely chopped flat leaf parsley

1 dash hot sauce, to taste

1 dash red wine vinegar, to taste

1 dash freshly cracked pepper, to taste

For the smørrebrød:

8 ounces fingerling or new potatoes

4 slices Danish-style rugbrød (rye bread)

2 to 3 small radishes, thinly sliced

1 pickled red onion, thinly sliced

4 tablespoons crispy fried onions

Dill sprigs, for garnish

Chopped chives, for garnish

Flat leaf parsley leaves, torn, for garnish

Instructions

1

Cover potatoes with salted water and bring to a boil. Meanwhile, make the remoulade: Combine the Vegenaise®, mustard, chopped herbs, chopped capers, hot sauce, and cracked pepper in a medium bowl. Stir until well combined. Taste and adjust seasoning.

2

When the potatoes are fork-tender, drain and set aside until cool enough to handle. Slice into ¼-inch thick rounds. Sprinkle with salt and pepper to taste.

Key Points About Ingredients:

  • Rugbrød (Danish-style rye bread) is a dense, sourdough-fermented whole grain bread that adds a nutty, slightly tangy backbone and significantly more fiber than standard sandwich bread.
  • Fingerling and new potatoes have thin, delicate skins and a creamy, waxy texture that holds its shape beautifully when sliced, making them ideal for smørrebrød toppings.
  • Vegenaise® is an egg-free mayonnaise alternative made primarily from expeller-pressed oils, delivering the same rich, creamy texture as traditional mayo with no cholesterol.
  • Capers are the pickled flower buds of the Capparis spinosa plant and contribute a briny, slightly floral punch that brightens the herbed remoulade considerably.
  • Crispy fried onions add a satisfying textural contrast and a sweet, caramelized depth that balances the cool, creamy potato topping.
  • Fresh dill is a cornerstone herb in Scandinavian cooking and pairs naturally with potatoes, lending a light anise-like freshness to the remoulade.
  • Pickled red onions mellow in acidity over time and provide a vivid magenta pop of color alongside a tangy bite that cuts through the richness of the remoulade.

Key Nutritional Insights:

  • Potatoes are an excellent source of potassium and vitamin C, and their resistant starch content increases when cooked and cooled, which may support gut health.
  • Rugbrød delivers significantly more dietary fiber and complex carbohydrates per slice than white bread, helping to promote satiety and steady blood sugar levels.
  • Vegenaise® contributes healthy unsaturated fats from plant-based oils while keeping cholesterol at zero, making this a heart-friendlier alternative to egg-based mayonnaise dressings.
  • Fresh herbs like dill, parsley, and chives are low in calories yet rich in vitamin K and antioxidants, adding genuine nutritional value beyond mere garnish.
  • Radishes are very low in calories and provide a modest source of vitamin C and folate while adding satisfying crunch and a peppery bite.
  • This dish is entirely plant-based and naturally dairy-free, making it suitable for vegan diets without any ingredient substitutions required.
