Ingredients

1 1/2 cups dried cannellini, soaked in at least 3 inches of water to cover overnight

2 tablespoons extra-virgin olive oil

¼ cup – ½ cup finely diced pancetta or slab bacon

2-3 cloves garlic, minced

½ cup dry white wine

28 ounce can whole, peeled plum tomatoes

2 cups water

salt and freshly ground black pepper to taste
