Key Points About Ingredients:
- Amaranth is an ancient grain and complete protein, containing all essential amino acids — making these fritters surprisingly protein-rich for a plant-based dish.
- Sweet potato puree adds natural sweetness, moisture, and a hefty dose of beta-carotene (vitamin A), supporting immune health and skin vitality.
- Swiss chard is a nutritional powerhouse loaded with vitamins K, A, and C, as well as magnesium and iron, giving these fritters a serious green boost.
- Purely Elizabeth original oatmeal acts as a binding agent while adding fiber and a subtle oat flavor that complements the earthy amaranth beautifully.
- Coconut oil is used for frying, providing medium-chain triglycerides (MCTs) that give these fritters a lightly crispy, golden crust with a hint of richness.
Key Nutritional Insights:
- Each serving provides a substantial amount of complex carbohydrates from amaranth and sweet potato, making these fritters an excellent source of sustained energy.
- The combination of amaranth and oats delivers both soluble and insoluble fiber, supporting digestive health and helping you feel full longer.
- Sweet potato and swiss chard together contribute over 100% of the recommended daily intake of vitamin A per serving, supporting eye and immune health.
- Amaranth is naturally gluten-free and rich in iron and magnesium, making these fritters a great option for those following a gluten-free diet.
- With minimal added fat from coconut oil and no cholesterol from animal products, these fritters are a heart-friendly, entirely plant-based meal option.
