Ingredients

24 oz. frozen mixed vegetables

2 cups vegetable broth

1 13.5oz. can coconut milk

1 Tbsp curry powder

1/2 tsp dried ground ginger

salt and pepper to taste

Instructions

1

Add the frozen vegetables and broth to a soup pot (it's okay if the broth does not fully cover the vegetables). Place a lid on top and turn the heat on to high. Bring the broth up to a boil.

2

Give the vegetables a good stir, turn the heat down to low, then add the coconut milk, curry powder, and ginger. Stir to combine, then let simmer for just a few more minutes.

3

Taste the broth and add salt and pepper to your liking.

4

Serve hot with bread or rice.

Key Points About Ingredients:

  • Frozen mixed vegetables are a nutrition powerhouse — they're flash-frozen at peak ripeness, locking in vitamins and minerals just as effectively as fresh vegetables.
  • Coconut milk adds a rich, creamy texture and a subtle natural sweetness that balances the warmth of curry powder beautifully.
  • Curry powder is a blend of spices including turmeric, which contains curcumin — a compound celebrated for its anti-inflammatory properties.
  • Vegetable broth forms the savory base of this curry, adding depth of flavor without any added fat or animal products.
  • Ground ginger lends a gentle heat and digestive benefits, complementing the curry spices perfectly in this simple dish.

Key Nutritional Insights:

  • Each serving provides a solid dose of plant-based fiber from the mixed vegetables, supporting digestive health and helping you feel full longer.
  • Coconut milk contributes saturated fat primarily in the form of medium-chain triglycerides (MCTs), which are metabolized differently than long-chain saturated fats.
  • This curry is naturally vegan and dairy-free, making it an excellent option for those following plant-based or lactose-free diets.
  • The mixed vegetables contribute meaningful amounts of vitamins A and C, both important antioxidants that support immune function and skin health.
  • At roughly 280 calories per serving, this curry is a satisfying yet lighter meal option, especially when paired with a modest portion of rice.
