Serve Beef, Mushroom and Barley Soup with bread and corn.
Key Points About Ingredients:
- Pearl barley is a nutrition powerhouse — it adds fiber, B vitamins, and a satisfying chewiness that thickens the soup naturally as it cooks.
- Chuck roast beef cubes are ideal for soup because the connective tissue breaks down quickly when simmered, delivering tender, flavorful bites.
- Canned mushrooms are a convenient pantry staple that add deep umami flavor without any prep — just drain and drop them in.
- Homemade beef broth elevates the soup's flavor significantly compared to store-bought, reducing sodium and adding a clean, rich base.
- Red onion brings a slightly sweeter, milder flavor than yellow onion, complementing the savory beef and mushrooms beautifully.
Key Nutritional Insights:
- Each serving provides a substantial amount of complete protein from the beef, supporting muscle maintenance and satiety.
- Pearled barley contributes dietary fiber that supports digestive health and helps keep you feeling full longer.
- This soup is a good source of iron, which is essential for healthy red blood cell production and energy levels.
- The beef broth base provides collagen-supporting minerals including zinc and phosphorus.
- Mushrooms naturally contribute B vitamins, particularly B2 (riboflavin) and B3 (niacin), supporting energy metabolism.
