Key Points About Ingredients:

  • Arborio rice is a short-grain Italian rice with a high starch content that releases slowly during cooking, giving risotto its signature creamy, velvety texture without any cream.
  • Parmigiano Reggiano is an aged Italian hard cheese with a complex, nutty flavor; always grate it fresh for the best melt and taste in this dish.
  • Prosciutto is a dry-cured Italian ham that adds a delicate, salty depth to the risotto base — its fat renders beautifully into the butter and olive oil mixture.
  • Using dry white wine adds acidity and brightness that balances the richness of the butter, cheese, and broth, so choose one you'd enjoy drinking.
  • Keeping your chicken broth at a gentle simmer before adding it to the rice ensures even, consistent cooking and prevents the risotto from cooling down between additions.

Key Nutritional Insights:

  • Arborio rice is higher in starch than regular long-grain rice, contributing to the dish's creamy consistency and providing a good source of quick-release carbohydrates for energy.
  • Parmigiano Reggiano is a notable source of calcium and protein, and its long aging process makes it naturally low in lactose, suitable for many who are lactose sensitive.
  • Olive oil provides heart-healthy monounsaturated fats and antioxidants such as vitamin E, making it a nutritionally superior cooking fat compared to refined vegetable oils.
  • Prosciutto contributes a meaningful amount of protein and B vitamins, particularly B1 and B3, though it also adds sodium, so adjust added salt accordingly.
  • Chicken broth adds collagen, minerals, and a savory depth while keeping the overall calorie addition moderate compared to cream-based alternatives.
