Drop two tablespoon of batter for each fritter. Fry 3-4 pancakes at a time. Allow fritters to brown on one side, 2-3minutes, then flip and cook on the other side for a minute more.

5

Keep pamcakes warm in a 300F oven while you finish making the rest of the pancakes.

6

Enjoy them warm or if you must, dust with powdered sugar.

Key Points About Ingredients:

  • Very ripe bananas are essential — the darker and spottier the peel, the sweeter and more flavorful your fritters will be, as the starches have fully converted to natural sugars.
  • All-purpose flour provides just enough structure to hold the batter together without making the fritters heavy or dense, keeping every bite light and tender.
  • Using a nonstick saucepan with butter or canola oil ensures an even golden crust; butter adds rich flavor while canola oil keeps the fritters slightly lighter.
  • Frying only 3–4 fritters at a time prevents the pan from losing heat, which is key to achieving a proper golden-brown sear rather than a soggy steam.
  • A pinch of salt is a small but mighty addition that balances the sweetness of the banana and sugar, bringing all the flavors into harmony.

Key Nutritional Insights:

  • Bananas are a natural source of potassium and vitamin B6, both of which support heart health and proper muscle function.
  • Each serving provides a moderate amount of quick-digesting carbohydrates, making these fritters a handy energy boost in the morning.
  • The egg contributes high-quality protein and choline, an important nutrient for brain health often underconsumed in everyday diets.
  • Using canola oil instead of butter reduces saturated fat while contributing beneficial monounsaturated and polyunsaturated fatty acids.
  • These fritters are relatively low in sodium, especially when compared to packaged breakfast options, making them a friendlier choice for those watching salt intake.
