Key Points About Ingredients:

  • Muscovado sugar adds a rich, molasses-like depth of flavour that elevates these donuts beyond a standard sugar-sweetened bake.
  • Wholemeal flour provides extra fibre and a nutty character compared to plain white flour, making these donuts a more nutritious choice.
  • Fresh blueberries are packed with antioxidants and natural sweetness, adding vibrant colour and juicy bursts throughout each donut.
  • Whipping the egg whites to stiff peaks is the key technique here — it creates the airy, light texture that makes these baked donuts so special.
  • Using melted butter rather than creamed butter keeps the batter smooth and easy to pipe, ensuring perfectly shaped donuts every time.

Key Nutritional Insights:

  • Each serving provides a modest amount of protein from egg whites and wholemeal flour, helping to make this treat more satisfying.
  • Wholemeal flour contributes dietary fibre which supports healthy digestion, making these donuts a smarter choice than those made with refined flour.
  • Blueberries are one of the richest sources of antioxidants among common fruits, offering vitamin C and vitamin K in every bite.
  • Baking rather than frying significantly reduces the total fat content compared to traditional donuts, making these a lighter indulgence.
  • Muscovado sugar retains natural molasses, providing trace minerals such as iron and calcium not found in refined white sugar.
